Mango Lassi

My kiddos have been on a smoothie kick this summer and so my freezer is full of all kinds of frozen fruit, including a ton of frozen mango, so tonight while I was making Indian coconut Kurma, I thought I would make some Mango Lassi’s for the kiddos, to go with it. And then Grandma lured them away with cousins and pizza, which let’s be honest, is hard to beat! So, my baby and I shared a mango lassi and we were in Heaven! This recipe is awesome. It’s on the thick side, so feel free to add more coconut milk, but it’s smooth and creamy and sweet and perfect! <3 this recipe. Hope you guys do too! Continue reading

New & Improved Bombay House Chicken Coconut Kurma

A month or two ago I updated my Bombay House Chicken Tikka Masala recipe (from my old Blog over at Mattawamum) using the suggestions that I got from my readers, and thought I would make a new and improved version of my Bombay House Chicken Coconut Kurma as well. I have tried and failed more times with this recipe than any other I have ever created, but after taking all the advice from my readers, I finally created the most legit, delicious, sweet, creamy, flavorful Kurma recipe that I am pretty proud of, excited to share, and totally addicted to! Indian Butter Chicken

This week I have been cooking and baking like crazy, and have been so excited to share some beautiful, delicious recipes with you, but all the ones I had high hopes for, just didn’t make the cut. New & Improved Bombay House Chicken Tikka Masala

On my last blog {mattawamum} I created a post for Bombay House’s Chicken Tikka Masala, which was by far my most popular recipe. I recently read through the comments section, and someone mentioned that Bombay House was confirmed to use fenugreek, a herb commonly used in Indian cooking that I had never heard of before. Since I am a huge perfectionist, and get bored really easily, I thought I would change up this recipe, in hopes to improve it. My husband’s motto in life is: “why mess with a good thing?” Which is scary, because this Bombay House Chicken Tikka Masala is one of his all time fave’s, but that’s why he needs me… because I like to mess with good things, and make them GREAT! Continue reading
