
A couple of weeks ago in San Francisco we ordered an Indian takeaway late one night to our hotel and had these to-die-for Masala fries that I was determined to recreate and make all the time when we got home. They were served with mint sauce, tamarind and Raita– which combined made the fries spicy, salty, tangy, sweet and just SO full of flavor! I created a quick and simple recipe using store-bought oven fries, a jarred plum sauce (which is the closest thing I could find to Tamarind), and home-made the Raita and mint sauce. The Masala paste is from my Bombay House tikka masala recipe– so if you love that, you’re going to LOVE these. These are a thing you guys!! Enjoy.
Masala Fries
Serves: 4
Prep Time: 20 mins
Cook Time: 30 mins

Ingredients
- 1 large packet frozen french fries
- 1 Tbsp unsalted butter
- 2 Tbsp Olive oil
- 2 garlic cloves, minced
- 2 tsp ground coriander
- 2 tsp Methi powder
- 2 tsp garam masala
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1 small (8oz) can tomato sauce
{For the Mint Sauce} - 6-8 oz mint leaves
- Cilantro (1 cup)
- 1 tsp cumin
- 2 cloves garlic
- ½ tsp ginger squeeze
- 1 1/2 tsp sugar
- 1 tsp lemon juice
- 1/2 tsp sea salt
- 5 Tbsp water
{For the Raita} - 1 cucumber
- 1 cup natural yoghurt
- 1 Tbsp lemon juice
- ¼ tsp sea salt
Cilantro and Plum Sauce for serving
Instructions
1. To make the mint sauce: combine all ingredients in a blender, and blend until smooth, set aside in the fridge.
2. To make the Raita: grate the cucumber, wring out the water in a paper towel, transfer to another paper towel and wring out again. Stir in the yoghurt, sea salt and lemon juice, and set aside in the fridge.
3. Cook the fries according to package directions.
4. Meanwhile, make the masala: melt the butter in the olive oil in a saucepan over medium high heat, add the garlic and spices, and stir in the tomato sauce. Let simmer on low heat until thickened.
5. Coat the fries evenly with the masala paste.
6. Serve with the mint sauce, raita, plum sauce and fresh chopped cilantro.
