
This weekend my mother in law posted pics of her amazing cinnamon rolls on the family text to entice us over, but we couldn’t because we had colds! 🙁 But there was something about feeling crappy and being stuck inside all day that made me crave something delicious, and I happened to have all the ingredients I needed to make these, and they were easy enough to make even while not feeling great. My family were so excited to have warm cinnamon rolls to cosy up to while watching movies together! Thanks to my mother in law for sharing her famous cinnamon roll recipe, it’s our all-time fave, and I hope it becomes one of yours too. <3
Cinnamon Rolls
Makes: 21 large
Prep Time: 2 hours
Cook Time: 15-18 mins

Ingredients
- 3 cups warm water
- 3 Tbsp instant yeast
- 1 cup white sugar
- 1/3 cup olive oil
- 1 Tbsp salt
- 8 cups flour
{For the filling}
- 3/4 cups butter
- white sugar (about 3 Tbsp)
- Brown sugar (about 1/2-1 cup)
{For the Frosting}
- 4 cups powdered sugar
- 3/4-1 cup cream
- 1 tsp vanilla
- 1/4 tsp sea salt
Instructions
- Add warm water, yeast, sugar, oil and salt to the bowl of an electric mixer, stir to combine, and let stand for 3-5 mins until foamy
- Add enough flour to make a soft, slightly sticky dough, (about 8 level cups).
- Mix using the kneading hook until the dough comes together in a ball
- Let rise in a warm space until doubled in size (about an hour)
- Place the dough on a generously floured surface, sprinkle more flour on top of the dough, then roll into a long rectangle shape with a rolling pin
- Slather 3/4 cup softened butter over the dough, sprinkle cinnamon and white sugar over the top, then sprinkle generously with brown sugar
- Roll up the dough loosely, to form a really long roll, and cut even slices of the dough (about 2-3″ in size)
- Preheat oven to 350degF and grease a cookie sheet with non-stick cooking spray
- Place the slices on the cookie sheet, let rise again until doubled in size, about 30mins to an hour, then bake for 15-18 minutes until the tops are slightly golden.
- While cooling prepare the frosting: add the powdered sugar, cream, salt and vanilla and mix until smooth. Spread over the cinnamon rolls, and serve warm.
