
I’m not much of a “salad person” and make them very rarely, but i’m a big fan of this one. It’s my mother-in-law’s go-to winter side salad, and she was kind enough to share “the recipe.” It’s not as much of a recipe as it is a list of ingredients, but for those of you like me who are completely lost as to what goes together in a salad, it’s a great combination and balance of flavor, texture and color that work so well together. I love how versatile this recipe is: you can change it up by substituting the pears for oranges or dried cranberries, you can sub. the pecans for walnuts, pine nuts or pistachios, and also change out the feta for your fave. cheese, but if you can find a good fig balsamic vinaigrette, it will make your salad! It’s become the only salad dressing in our house. We will turn to this salad recipe all winter long! Hope you guys love it too.
Spinach, Pear and Feta Salad
Serves 6
Prep Time 5 mins

Ingredients
- 1 pkg (about 6 cups) spinach/arugula mix
- 2 red pears
- 1/2 cup crumbled feta cheese
- 1/2 cup pecans
- (fig) balsamic vinaigrette
Instructions
1. Rinse the spinach, and place in a serving bowl
2. Core and cut the pears into bite sized pieces and add to the bowl
3. Add the crumbled feta cheese and pecans
4. Serve with fig balsamic vinaigrette
