
I often tell my mother in law that she’s the one that needs a food Blog, since so many of my recipes are either hers, or have been inspired by her! Everything she makes is amazing, but one of her fortes is soups and stews (and her home made dinner rolls to go with them, that I might have to post about later!) my whole family love her Chicken Posole recipe, but my son Braden goes crazy for it! It just makes him SO happy when I make it… so I make it a lot!
Chicken Posole
Serves: 12
Prep Time: 10 mins

Ingredients
- 2 Tbsp olive oil
- 2 large onions, diced
- 4 cloves minced garlic
- {1-2 serrano peppers, finely minced: optional}
- 5 Qts chicken stock
- 6 chicken breasts, cut into bite-sized pieces
- 6lb can hominy
- Kosher salt & pepper
- cilantro, limes & avocado to serve
Instructions
1. Heat the olive oil in a large saucepan over medium-high heat, add the onion, garlic and peppers {if using} and sauté for 1-2 minutes, until fragrant.
2. Add the chicken stock and chopped chicken, bring to a boil, then turn the heat to medium, and simmer until the chicken is cooked all the way through {10-15 minutes}.
3. Rinse and drain the hominy, add to the chicken and stock, and heat through. Serve the soup with freshly chopped cilantro, lime juice, avocado
