Cheese Fondu

I can’t even tell you how excited my family gets when I make this recipe! They crowd around me in the kitchen, stealing food as I prepare it, hovering over my shoulder dipping bread before I get the chance to serve it. It’s thick, smooth, creamy and cheesy, seasoned perfectly, and best of all, it won’t separate– no matter how long you leave it in your pan/fondu maker (not that it will be in there long).

But I don’t just love this recipe for how delicious, and fool-proof it is, I love it because it’s fun for the kids, brings my family together, and gets them to eat a ton of fruits and vegetables! I always make so much variety that everyone is happy, adults, kids and even babies! 

The secret is to use the right kind of cheese– a mix between American/Swiss (which I find at both Costco and Winco where I shop). Melt it with some stock and white wine, a little seasoning and it’s good to go in 10 mins! Seriously, it’s doesn’t get quicker, easier, and more loved than this is my home, and I hope your family will love it just as much.

Cheese Fondu

Serves: 4-6
Prep Time: 15 mins

Ingredients

  • 1/2 cup chicken stock/bouillon
  • 1/2 cup sweet white wine
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp nutmeg
  • 1/4 tsp celery salt
  • dash black pepper
  • 26 oz. (Around 2lbs) American/Swiss mix cheese

Instructions

1. Bring the chicken bouillon and white wine to a boil in a pan over high heat.
2. Reduce to medium. Add the spices and stir until combined.
3. Add the cheese a couple of slices at a time, when it melts, add more and repeat until all the cheese is gone, and the fondu is nice and thick.

Notes


Serve with bread, cooked meat, raw/cooked vegetables and fruit. Today I served it with charred red peppers, baby potatoes, seasoned roasted carrots, apples (which is my kids fave) chorizo and French bread (my husband’s fave). Other things we have done in the past: chicken (steak tips would be amazing too!) Grapes (another fave), sautéed mushrooms and snap peas.
