Blackberry Frozen Yoghurt

Every time we go to town as a family, which is about 60 miles/an hour away, we like to go to our favorite frozen yoghurt bar. My husband (who’s a man who knows what he likes) gets vanilla with such an abundance of caramel sauce it makes him feel sick–and he does this every time! I’m usually all about the chocolate and cake batter, but I like to try all the flavors in case I find something better, and recently I discovered one that was– mountain blackberry! It took me by surprise, but I have been addicted ever since.

Yesterday my kids wanted to make some frozen popsicles, and I happened to have blackberries in the freezer and some yoghurt in the fridge, so we had fun inventing a new recipe together. I thought, we can taste it and tweak it until it’s perfect, but you guys… we tasted it and couldn’t stop eating it, it was already perfection!

This recipe is enough to make 12 popsicles, but I made 6 for the kids, and got out my frozen (kitchen aid) ice cream maker to churn the rest into frozen yoghurt for my husband and I when the kids went to bed! The best part is that I didn’t have to drive 60 miles for it! 😉 The bad part is, I seriously want to make and eat this every day for the rest of my life! I hope you love it as much as I do.

Blackberry Frozen Yoghurt

Serves: 4
Prep Time: 25 mins

Ingredients

  • 2 c. Greek Vanilla Yoghurt
  • 1/8 cup Marionberry/blackberry jam (Costco)
  • 2 Tbsp Honey
  • 1 cup frozen/fresh blackberries
  • 1 cup coconut milk

Instructions

1. Combine all ingredients in the bowl of an electric mixer. Pour into popsicle moulds and freeze overnight, or churn in an ice-cream maker for 20 minutes.
